Small Batch is hugely fond of German Ortiz, and not justbecause of the goodness of his coffee. One of the founding producers of the feted Asoguacharos group – German offers increasingly delicious coffee from his several farms, while steadfastly fulfilling the treasurer function at the group, off ering up his home for group meetings and generally wearing the biggest smile in the room.
Small Batch is proud to present something special from German's January 2025 harvest, a variety that’s becoming more ubiquitous by the month: in Spanish it’s "borbon aji", meaning borbon "chilli" (the latter mainly because the cherry ripens to the orangey colour of a habanero). This is the third harvest of this variety, planted 4.5 years ago on German’s second farm.
German starts fermentation in cherry form (closed plastic bags for 24 hours) and continues for another 36-48 hours in de-pulped form (sealed plastic barrels with one-way valves for off -gassing).
