Las Lajas is a highly respected specialty coffee farm in Costa Rica's Central Valley, owned and run by Oscar and Francisca Chacon. Their operation spans eight farms, situated between 1,300 and 1,550 meters above sea level, known for cultivating complex, high-elevation coffees. Las Lajas gained international recognition after an earthquake in 2008 prompted experimentation with natural and honey processing, leading to award-winning coffees. Today, approximately 90% of their production consists of honey or natural coffees. The Chacon family consistently reinvests to improve quality and support sustainable progress, including investments in a quality lab, office space, and new roasting equipment. They utilize innovative techniques like temperature-controlled drying curves and heaping to create complexity and sweetness.
