Las Lajas gained international recognition after an earthquake in 2008 prompted experimentation with natural and honey processing, leading to award-winning coffees. Today, approximately 90% of their production consists of honey or natural coffees. The Chacon family consistently reinvests to improve quality and support sustainable progress, including investments in a quality lab, office space, and new roasting equipment. They utilize innovative techniques like temperature-controlled drying curves and heaping to create complexity and sweetness.
