Luz Helena Salazar produced this lot at La Leona, her eight-hectare farm outside Armenia, Quindio. Sitting at 1450 MASL, the farm benefits from volcanic-derived soils, Andean elevation, consistent cloud cover and mild temperatures, all of which support slow, even cherry maturation and concentrated sweetness.This lot is 100% Caturra, a compact mutation of Bourbon known for its sweetness, balance and potential for clarity when grown and processed with care. Luz’s cherries are harvested to strict ripeness standards before being delivered to Cofinet’s La Pradera mill for processing.At the mill, cherries are hand-sorted and floated to remove low-density fruit before undergoing a 30-hour underwater fermentation. After fermentation, the coffee is pulped, washed and dried on raised beds to a stable moisture content. This careful washed process helps preserve the coffee’s bright fruit character and floral lift.In the cup, raspberry and pomegranate lead the profile, supported by juicy orange acidity and a delicate rose note. The mouthfeel is syrupy, clean and sweet, with balance across the full cup.Luz works closely with Cofinet and the Arcila family’s production network, refining her approach season after season. This lot is a lovely expression of her continued focus on specialty coffee, and we’re very happy to share it again.
