This coffee was produced by Edward Sandoval. Market Lane was lucky enough to spend time with Edward on his farm this past November, and they’re in awe of his methodical and careful approach.
Quality is key to all of Edward’s practices and decisions on the farm, informing the varieties he selects and how he processes them. This lot is a Chiroso coffee – a variety known for its unique and complex cup profile. To bring out the best in it, Edward chose to extend the fermentation time to six days, intermittently adding extra cherries to slow down the fermentation and control the PH level. The result is a beautifully floral and vibrant coffee with delicious tropical fruit notes.
