Carambolo is a culmination of both regional expertise and processing prowess. It is a regional collection of coffee consisting of some of the best cherries in the Southern region of Huila, Colombia; renowned for incredible cup qualities full of bright acidity and elegant fruit characteristics.
The Carambola regional profile undergoes a systematic three stage process. The first is washing and disinfecting of cherries upon arrival to the processing station, floating, and cleaning. The second is an oxidation stage for 24 hours before depulping and rinsing off the mucilage. Finally, the third is a controlled and homogenous mechanical drying process. With these protocols the cup profile of Huila is preserved and amplified, showcasing an incredibly fruit-forward cup that is highly prized from the region.
