This microlot from Colombia showcases a delightful cup with notes of grapefruit, guava, stone fruits, and a hint of caramel. The cherries were carefully selected and dried using a 35-hour dry fermentation process, followed by 11 days on raised beds to achieve a 10% moisture content. This 100% Castillo variety coffee is produced by indigenous growers from Aponte, Nariño, who have mastered honey processing over the past four years. The producers are members of La Cooperativa de Cafes Especiales de Nariño, growing coffee above 1700 m.a.s.l. Cartel is dedicated to providing traceable, high-quality coffees and believes in fair pricing for farmers through sustainable buying practices.
